Apron up and cook some teriyaki beef stir fry

A stir fry is an easy and quick meal. A few minutes to cut the veggies and prep the sauce. Rice can take up to 20 minutes but you can now buy pre-cooked rice that just needs to be reheated. Most supermarkets also have pre-cut stir fry veggies as well.

Ingredients

  • 500grams Beef mince

  • ½ cup teriyaki sauce

  • 3 cloves of garlic (up to you)

  • 2 teaspoons corn flour

  • 1 tablespoon oil

  • 4 green shallots/spring onion

  • 500g veggies

  • ¾ cup roasted cashews

  • ½ cup rice per person

Method

  1. Cook rice

  2. Thinly slice spring onion. Reserve 1/3 length and slice length ways thinly. Add to iced water to allow it to curl up.

  3. Add corn flour, garlic and teriyaki sauce together

  4. Heat oil in frypan and cook mince making sure you break up the big lumps. About 60 seconds

  5. Add sauce mix to meat and veggies. Cook till veggies heated through. A stir fry is meant to have crunchy veggies

  6. Serve up with curly shallots on top

Enjoy!
