Apron up and make a quick and easy lamb salad

After a quick healthy meal? Easy lunch or even a dinner idea. This meal is something I turn to for a quick lunch during the week. I use leftover lamb steak, but what ever you have in the fridge from last nights dinner. Grabbing a pre-packaged salad from your local supermarket and throwing this together is a 5 minute lunch that is healthy and super tasty. Also cheap!

The salad cost $5 and that makes two lunches, the lamb steaks were a pack of 4 for $13, I had 1 so that makes it $2.25. Super tasty salad bowl lunch for under $5, you can’t beat that!

Ingredients

  • 100g leftover lamb sliced

  • ½ pack premixed salad (our favourite is a Thai flavoured one)

  • Boiled egg

  • ½ an Avocado

Method

  1. Boil an egg (we have a 7 egg cooker so cooked extra)
  2. Slice lamb
  3. Mix salad with the ingredients in the packet
  4. Slice up some Avocado
  5. Place salad on a plate (or bowl) lay on top lamb, avocado and egg
  6. Serve up.
