Rack of Lamb
Preparation time 20 mins
Cooking time 40 mins to 1 hour
Quantities vary to how many you are serving. This is just a list of ingredients for you to work out the volume you cook. In the video I was cooking for 4 people. We had veggies left over.
Ingredients:
- Lamb rack
- Beetroot
- Potatoes
- Sweet potatoes
- Onion
- Carrots
- Broccoli
- Mustard
- Garlic
- Olive oil
- Rosemary
Method:
- Pre heat oven to 180c
- Wrap bones with foil
- Coat fat side of rack with mustard or flavouring of your choice
- Place on rack over baking tray with the fat side up
- Chop veggies to suit and coat in olive oil and seasoning. Put Into the baking dish
- Roast for 40min – 1hr
- Rest meat for at least 10min
- Quick fry broccoli in garlic butter
Serve and enjoy!
