Cam cooks a rack of lamb and roast veggies for the family

Rack of Lamb

Preparation time 20 mins
Cooking time 40 mins to 1 hour

Quantities vary to how many you are serving. This is just a list of ingredients for you to work out the volume you cook. In the video I was cooking for 4 people. We had veggies left over.

  • Lamb rack
  • Beetroot
  • Potatoes
  • Sweet potatoes
  • Onion
  • Carrots
  • Broccoli
  • Mustard
  • Garlic
  • Olive oil
  • Rosemary


  1. Pre heat oven to 180c
  2. Wrap bones with foil
  3. Coat fat side of rack with mustard or flavouring of your choice
  4. Place on rack over baking tray with the fat side up
  5. Chop veggies to suit and coat in olive oil and seasoning. Put Into the baking dish
  6. Roast for 40min – 1hr
  7. Rest meat for at least 10min
  8. Quick fry broccoli in garlic butter

Serve and enjoy!
