When I think of Mediterranean food I think olive oil, pasta, lamb, and semi sun-dried tomatoes. But mostly I think its ‘light’ food and full of great flavours and this recipe doesn’t fail to deliver. Add it to the BBQ table as a side dish or as a main on its own. Other than cooking the pasta its about 10min prep work!
Ingredients
- 375g Dry Penne Pasta
Dressing
- 1/3 cup olive oil
- 2tbs lemon juice
- 2tbs red wine vinegar
- 2tbs water
- 2ts garlic, mince
- 2ts dried oregano
- 1ts dried basil
- Cracked pepper to taste
Salad
- Good handful of Cos lettuce
- 1 large Cucumber, diced
- 1 avocado, diced
- ½ large red capsicum, thin sliced
- 250grams cherry tomatoes, halved
- 100grams semi sun-dried tomatoes
- ½ red onion, thinly sliced
- ½ cup pitted kalamata olives
- 100g feta cheese diced
Method
- Boil the Pasta till al dente (just cooked). Drain and rinse under cold water to stop the cooking and cool the pasta
- Whilst Pasta is cooking get the dressing happening. In a jar whisk all the dressing ingredients.
- Add all the salad ingredient and pasta into a large bowl and pour over dressing. Gently toss together until the dressing is coating everything.
- Serve up.
