What happens if you don’t have the ingredients you want? You pivot and make something up! This recipe uses soy sauce and brown sugar to give us the Teriyaki sauce flavour. Using pre-cut chicken pieces makes prep time faster.
Simple recipe for weeknight dinners for the whole family.
Recipe Ingredients
- 500g chicken leg meat
- ½ brown onion diced
- 1 medium carrot diced
- 1 small head of broccoli diced, including stalk
- 6 cloves garlic diced
- 150ml salt reduced light soy sauce
- 100ml water
- 3 tablespoons of brown sugar
- 3 handfuls of unsalted cashews
- ½ cup rice per person
- Flour
Recipe Instructions
1. Get rice cooking
2. Lightly coat chicken in flour
3. In a hot fry pan heat up 3tbs rice bran oil. Once hot cook chicken till browned off.
4. Combine soy, water and brown sugar in a bowl. Add to chicken, as well as garlic. Bring liquid back to the boil and cook down for 2min
5. Add veggies and continue to cook down liquid till it thickens to your desire. Stir in cashews.
6. Once rice is cooked serve up and enjoy.
