Cooking with Cameron: Lemon chicken salad

What to do with left over roast chook? Especially when you have only a short amount of time? Creating a salad is the way to go. I got half way through a bowl and started to feel full! Super healthy and so easy to make. 


  •  300g cold roast chicken, sliced
  • 1 cos lettuce
  • 2 tomatoes
  • ½ a corn cob
  • 1 avocado
  • ¼ capsicum
  • Small white onion
  • Salad dressing 


  1. Slice and dice all veggies and combine in a large bowl.  
  2. Slice roast Chicken, add to salad mix 
  3. Serve up with your favourite salad dressing
