What to do with left over roast chook? Especially when you have only a short amount of time? Creating a salad is the way to go. I got half way through a bowl and started to feel full! Super healthy and so easy to make.
- 300g cold roast chicken, sliced
- 1 cos lettuce
- 2 tomatoes
- ½ a corn cob
- 1 avocado
- ¼ capsicum
- Small white onion
- Salad dressing
- Slice and dice all veggies and combine in a large bowl.
- Slice roast Chicken, add to salad mix
- Serve up with your favourite salad dressing
