Looking to stretch your leftovers a little further? Consider mixing them with rice or adding scrambled eggs! In this particular recipe, we raided the fridge and discovered both – along with a few other ingredients, to create a satisfying meal for four: a delicious fried rice dish made with a heap of leftovers!
Ingredients
- Cooked rice
- 8 eggs
- Cooked Chicken – chopped
- Cooked sausage – chopped
- Carrots – diced
- Green capsicum – diced
- Garlic
Sauce
- Sesame oil
- Soy sauce
- Oyster sauce
Method
- Heat fry pan
- In a bowl combine eggs and mix well. Add to hot fry pan and cook eggs till just cooked. Remove from pan
- Add rice, chicken, sausage, carrots and capsicum to the medium heat, fry pan with combined sauce flavours. Heat through
- Once heated through add eggs and combine.
- Serve up!
