Cooking with Cameron: Making leftover fried rice

Looking to stretch your leftovers a little further? Consider mixing them with rice or adding scrambled eggs! In this particular recipe, we raided the fridge and discovered both – along with a few other ingredients, to create a satisfying meal for four: a delicious fried rice dish made with a heap of leftovers!

Ingredients 

  • Cooked rice 
  • 8 eggs 
  • Cooked Chicken – chopped  
  • Cooked sausage – chopped  
  • Carrots – diced 
  • Green capsicum – diced 
  • Garlic 

Sauce 

  • Sesame oil 
  • Soy sauce  
  • Oyster sauce 

 Method 

  1. Heat fry pan
  2. In a bowl combine eggs and mix well. Add to hot fry pan and cook eggs till just cooked. Remove from pan
  3. Add rice, chicken, sausage, carrots and capsicum to the medium heat, fry pan with combined sauce flavours. Heat through
  4. Once heated through add eggs and combine.
  5. Serve up!
