Cooking with Cameron: Potato bake with a twist

The ultimate comfort food! Creamy, cheesy potato goodness! Great for the family dinner or to take to a gathering. One problem will be not enough made!!! So get into it and make Funeral potatoes today! 

Ingredients 

Potato mixture

  • 6 large potatoes (peeled or unpeeled 
  • ½ onion finely chopped 
  • 1 ½ cups grated cheese 
  • ¼ cup Parmesan cheese 
  • 2 cups crushed corn flakes 
  • ¼ cup melted butter 
  • 2 tbs diced unsalted butter 

Sauce 

  • ¼ cup melted butter 
  • ½ onion finely chopped 
  • ¼ cup plain flour 
  • 1 cup chicken broth 
  • 1 cup thicken cream 
  • 1 cup sour cream 
  • 1 sprig of rosemary 
  • 1 tsp Dijon mustard  
  • 2 cloves of garlic 

Method 

 Sauce 

  1. In a sauce pan, add in the butter and melt over medium heat. Add onion and garlic and sauté until its starts to brown. Sprinkle in the flour and continuously stir until well combined. 
  2. Add chicken broth, heavy cream, sour cream, mustard and rosemary. Still until smooth and bring to the simmer and stir till it starts to thicken. Remover from heat. 

Potato Casserole 

  1. Preheat oven to 180c (fan). 
  2. Grate potatoes. Squeeze out liquid and place in a large mixing bowl 
  3. Combine cheese, sauce and grated potato. Pour into a deep sided baking dish 
  4. Crush corn flakes and spread over the top. Spread diced butter over the top. 
  5. Cook for 1hr or till cooked
