Quick and easy pork and ginger stir fry. A great mid-week meal I have used pork strips but you can substitute beef. Also depending on your ginger tastes this is very strong on the ginger!
- 400g thinly sliced pork
- 2 tbsp vegetable oil
- 4 garlic cloves, finely sliced
- 1 onion sliced
- 3cm piece of ginger, finely julienned
- 400g button mushrooms, quartered
- ¼ cup spring onions
Marinade
- 2tbsp soy sauce
- ½ tsp baking soda
- 3 tsp corn starch
Stir fry sauce
- 3tbsp oyster sauce
- 4tbsp soy sauce
- 2tsp sugar
- 2tsp whit vinegar
Method
- Combine marinade ingredients and coat pork stripes. Set aside
- Combine stir fry ingredients
- Heat vegetable oil in a wok or frying pan on high heat. Add Pork and spread it out over the pan. Don’t overcrowd the pan. Sear for 2min before Stir-frying. Add garlic, onion and ginger. Cooking for another 60seconds. Add mushrooms and cook for 2minutes.
- Pour over stir-fry sauce and combine. Toss through spring onions and serve.
- Serve up and enjoy
