Cooking with Cameron: Sweet and sour chicken parcel

Another easy meal that is hard to stuff up. Wrapping the chicken fillet in foil steams it and keeps it super juicy. Adding flavouring and veges to your taste makes it really fun. Best part with this way of cooking is it can be done in the oven or on the BBQ or by the camp fire. Enjoy experimenting with the flavours. Remember its also about the colours.

Ingredients

  • 4 chicken fillets
  • 1 small carrot sliced
  • 1 red onion roughly diced
  • 1 red caps diced
  • 1 small can of corn (fresh corn if you want)
  • 1 small tin of pineapple chunks

     

  • Ground Paprika.
  • ½ cup rice per person
  • 4 tbs Apricot sauce

Method

  1. Preheat oven to 190c
  2. Get rice cooking.
  3. Tear baking paper about 50cm long. Lay 1 chicken fillet in the centre of the paper. Add veges and 1 tbs apricot sauce. Light shake of Paprika.
  4. Hold ends of paper together and roll it down till just touching the food. Scrunch ends into steal the ‘bag’ off. Repeat with Alfoil. Repeat 4 times.
  5. Bake in oven for 40min.
  6. Remove from oven and unwrap carefully as there will be a build up of steam.
  7. Serve with rice.
