Dads Cook Night – Butterfly Roast Lamb

Hi guys, welcome to Cameron’s Kitchen coming to you every week from my abode in Tassie

Time to apron up and make Wednesdays the day of the week all dads across Australia lean in with the kids to cook the family dinner. You don’t have to be a Masterchef, just follow my simple recipes each week, get the kids involved, and post a snap remember to #thefatheringproject and #thefatheringchannel.

Recipe for the week:
Butterfly roast lamb with mixed tray roasted vegetable with spring of rosemary

Ingredients

  • Butterfly lamb – pre-seasoned lamb
  • Potatoes
  • Carrots
  • Beetroot
  • Brown onion
  • Sweet potato
  • Broccoli

Quantities vary with how many are going to be eating

Serving size suggestions for 4

  • 2-3 pieces of potato
  • 1 piece of carrot
  • 2 pieces beetroot
  • ½ onion

Method

If cooking lamb in oven

Preheat oven to 175c

Roast 1h per kilo for medium cook. If you like it a bit rarer cook for less time

If cooking lamb on BBQ

Get your grill super-hot

Sear one side then flip over and sear the other side. Turn the heat down (gas cooking) and turn every 10 min so it doesn’t burn the other edges. Cook for about 45min.

Veggies

Cut to size – the smaller the quicker they will cook.

Toss in oil and herb mix

Cook in the oven for about 1hour or till potatoes are soft

Broccoli – boil the water, throw the Broccoli in and when it comes back to the boil take off the heat and drain the water off

I haven’t done a gravy with this but gravox is great!!!!!
