Easy roast chicken and veggies recipe

This recipe is nothing special! A roast dinner is one of the easiest meals to prepare. Getting the timing right for the meat to cook. Using a pre packed roast chicken takes all the hassle out of it. Season veges to your own tastes. I leave the skin on the onions and once cook peel the skin off. This is a great meal to get the kids in to help with. Learning to use knives to cut the veges and understanding the use of the right knife for the right job.


  • 1 butterflied and boned chicken (prepackaged from your local supermarket)

  • Potatoes

  • Sweet potatoes

  • Onions

  • Carrots

  • Asparagus

  • Brocolini

  • Corn cobs

  • Oil

  • Seasoning


  1. Preheat oven to 200c
  2. Lay chicken on a lined baking dish and cook for 1hr (follow the instructions on the packaging)
  3. Cut potatoes, sweet potatoes and carrots into medium size chunks, place in bowl with onions. Drizzle with oil and add seasoning. We used mixed herbs in the video.
  4. Place on lined baking dish and cook for 45-60min.
  5. 10min before meat is ready boil water and boil corn for 8min. Place broccolini and asparagus in for 30seconds at the end.
  6. Serve up and enjoy.
