This recipe is nothing special! A roast dinner is one of the easiest meals to prepare. Getting the timing right for the meat to cook. Using a pre packed roast chicken takes all the hassle out of it. Season veges to your own tastes. I leave the skin on the onions and once cook peel the skin off. This is a great meal to get the kids in to help with. Learning to use knives to cut the veges and understanding the use of the right knife for the right job.

1 butterflied and boned chicken (prepackaged from your local supermarket)

Potatoes

Sweet potatoes

Onions

Carrots
-
Asparagus

Brocolini
-
Corn cobs

Oil

Seasoning
Method
- Preheat oven to 200c
- Lay chicken on a lined baking dish and cook for 1hr (follow the instructions on the packaging)
- Cut potatoes, sweet potatoes and carrots into medium size chunks, place in bowl with onions. Drizzle with oil and add seasoning. We used mixed herbs in the video.
- Place on lined baking dish and cook for 45-60min.
- 10min before meat is ready boil water and boil corn for 8min. Place broccolini and asparagus in for 30seconds at the end.
- Serve up and enjoy.
