Garlic and rosemary mushrooms, the ‘bush steak’ recipe

Mushrooms are sometimes called the steak of the bush. A super iron food. For the vegetarian it’s a great way to get your iron intake up.

This meal can be a side dish or the main dish. If it’s a main then use cup mushrooms or larger. If a side use the cup mushrooms.

Ingredients

  • 500g cup mushrooms (whole)

  • Garlic – how much is up to you!

  • Fresh Rosemary – 2 sprigs

  • 100g butter

  • 50ml olive oil

  • Lemon juice

Method

1. Preheat oven to 220c

2. In a deep oven dish gently mix mushrooms, oil, butter, garlic and rosemary

3. Cook for 20min or until golden brown

4. Squeeze some fresh lemon juice over the mushrooms as you serve up.
