Holiday Scrambled Eggs
Cams put together a creative breakfast dish turning scrambled eggs into a Mexican-styled wrap that the whole family will love. Easy to make, and allows you to use up any Christmas left overs!
Ingredients
- 3 eggs
- 1 tablespoon of milk
- 1 large wholemeal wrap
Fillings
- ½ cup of chopped ham
- ¼ cup chopped Spanish onion or button mushrooms
- ¼ cup grated cheese
- Salt and pepper to taste
You can also use any left–over meats/or make this using any vegetables you have mushrooms, spinach, chopped Kale,
Method
- Combine eggs and milk and whisk together
- Pour into a moderate heated large pan, giving the pan a spray with light cooking oil
- Combine your filling and pour into the egg mix spreading out evenly
- Cook on a moderate heat setting so the egg base does not burn
- Turn out onto a large sandwich wrap, sprinkle grated cheese on top and wrap up your scrambled eggs into a wrap
- You can serve as a wrap-pie or slice it and serve with a garnish, like a fruit-chutney
