How Goods a Fisherman’s Basket? Let’s Make One

A seafood or fish platter is a favourite dish. It covers most bases and is fun to share. The basics are fish bites, calamari, prawns, ‘crab sticks’ (really just mushed up meat), and chips. Usually crumbed. So grab your favourite seafood and cook up a meal for the family and friends.

Ingredients

  • Prawn – green
  • White fish
  • Salmon
  • Calamari tubes
  • Potatoes

Crumbs

  • Bread crumbs
  • Flour
  • Eggs

Salad

Be lazy and buy a prepacked mix.

Method

  1. Cut potatoes into wedges and part boil them (till their just soft) drain and let cool and dry. Lay out on baking tray and spray oil over and sprinkle with seasoning. Place in preheated over, 250c for 30min or till getting crunchy.
  2. Peel and remove the poo track from the prawns.
  3. Dice up white fish into bite size pieces.
  4. Cut calamari into rings.
  5. Crumb the above fish.
  6. Heat vegetable oil until a piece of crumbing floats straight away. Cook crumbed seafood in small batches. This will allow the oil not to loose too much heat, once seafood start to float its cooked.
  7. Grill salmon.
  8. Once all is cooked serve up with the chips and salad and some tartar sauce.
