Raspberry and white chocolate muffins recipe

A super tasty muffin recipe that the family will love. Just remember when you are loading up the muffin papers don’t overload it!!!


  • 300g Self raising flour
  • 200g Castor sugar
  • 160ml oil
  • 150ml milk
  • 1 tsp vanilla
  • 1 egg
  • 150g white chocolate buds
  • 150g frozen raspberries


  1. Preheat oven to 180c
  2. Combine flour and sugar
  3. Add oil, milk, vanilla and egg to the dry mix. Stir through
  4. Once mixed add chocolate and combine. Then gently stir through the frozen raspberries.
  5. Lay out muffin papers in a muffin tin and 1/3 fill each paper. Place in oven for 20min.
  6. Once cooked allow to cool and enjoy.
