Smokey Charcoal Grilled Chicken and Mango salad for every family BBQ this summer!

Cam has put together a healthy summer salad of grilled chicken and mango perfect for lunches, summer cookouts and family BBQs.

Charcoal Grilled Chicken 

 This recipe is designed for 4 people. Using the charcoal grill just gives a great smokey taste. It takes a bit more work in setting up but the flavour difference between gas cooking and charcoal is worth the effort!  

Ingredients

BBQ Chicken

  • 6 Chicken thigh Fillets 
  • 1/3 cup Teriyaki Sauce 
  • 1 tbsp Golden syrup 
  • 4 cloves garlic   

Salad 

  • 2 baby cos lettuce 
  • 1 mango 
  • 1 beetroot  
  • 10cm cucumber  
  • 3 small carrots (grated) 
  • ½ red capsicum  
  • 4 boiled eggs   

Method   

  1. Heat Charcoal in the Charcoal volcano. 
  2. Mix Teriyaki, Golden Syrup and garlic and pour over the thigh fillets. Set aside. 
  3. Prepare the Salad. Tear lettuce and place in a large bowl. Chop/dice the rest of the veggies and mix in with Salad. 
  4. Once coals have heated, grill chicken. 8min either side or till cooked thru. Baste with remaining marinade as chicken cooks 
  5. Serve up and enjoy.
