Cooking with Cam – three generations cook homemade lemonade scones

Homemade Lemonade Scones

A special event brought all three generations together – joined by my father and son, this was a great opportunity to make an old family recipe, Lemonade Scones.

Ingredients 

  •  3 cups Self raising flour (GF 3 ½ cups) 
  • 1 cup pouring cream 
  • 1 cup lemonade 
  • 1 egg white 
  • Strawberry Jam (or to your taste) 
  • Whipped cream 

Method 

  1. Preheat oven to 200c Fan (220c non) 
  2. Put flour in bowl and slowly combine cream and lemonade with fork till it is too hard then use a knife to finish combining  
  3. Tip mixture onto a floured surface and gently kneed together to finish off 
  4. Lightly roll mix out to about 25mm thick then use circular cutter to cut scones out. Gently place on baking tray that has baking paper on it, repeat cutting and rolling till dough is used up 
  5. Brush egg white over top surface of scones. Bake for 17min or till top is golden brown 
  6. Serve up with jam and cream and your choice of beverage.
